Joe Shannon is executive chef of the Radisson Blu hotel, Spa and Leisure Centre Sligo. He has been awarded many accolades, has traveled extensively, participating in all sorts of culinary delights. The Classibawn Restaurant at the Radisson Hotel and Spa is AA Rosette accredited, Joe has won mouton cadet Sunday lunch awards, as well as been a founding member of the North West Branch of the Panel of Chefs and has also served on the National Executive of the Panel of Chefs of Ireland. His demonstration work has brought him to Irish festivals in Abu Dhabi as well as mainland Europe; he has given many lectures to collages on kitchen management, motivation and hygiene. He has been both competitor and judge at many international food competitions. He is totally passionate about all things food and his cookery demonstrations are renowned nationally for his inspirational dishes delivered with great passion and fun, raising hundreds of thousands of euros for all sorts of good causes. Joe is one of TV3s Ireland AM and Late Lunch Live resident chefs and also is well known in the North West for his radio column every Monday on Ocean FM “Afternoon Delight” along with Seamie McManus.
