Shane Smith hails from Co Cavan and has been cooking his way around Ireland and further afield for the past 16 years, starting his training in Co. Donegal in Tourism College Killybegs and then extending his studies to Galway Mayo Institute of Technology graduating with a degree in Culinary Arts, specialising in Pastry.
Over this period of time and to date, Shane has been very fortunate to have worked and ran the pastry sections in some of Ireland’s leading 5* hotels and restaurants.
Shane also works in collaboration with Coole Swan Irish Cream Liquor and to date has published 10 of their signature cookery booklets, this job sees Shane travelling country wide and abroad holding cookery demo’s, showcasing this amazing Irish product.
Recipe research and development is a huge aspect of his day to day role and trying to stay on top of current trends is very important. Both of these tie in nicely to the two recipe columns Shane writes on a monthly basis, one for the Anglo Celt News paper in his home town of Cavan and also with Taste.ie, Ireland’s leading food and wine magazine.
In September 2015, Shane was honoured to have fought off stiff competition to be awarded the title of “Best Bakery Manager in Ireland” in conjunction with Shelflife magazine and most recently has landed a cookery slot on Sunday AM where he can been seen regularly bringing his natural flare and love for all things sweet from the TV3 studios into the nation’s homes.
