HeadshotMaster Pastry Chef, Shane Smith has nearly 20 years’ experience working in some of the world’s most celebrated pastry kitchens across the globe. The Co. Cavan native is Head Pastry Chef and Head of Product Development at Airfield Estate in Dundrum.

 

Shane also works closely with Coole Swan Irish Liquor as a consultant and lead recipe developer for the renowned Irish cream liqueur and has exclusively published recipes in 10 of the company’s signature cookery books.

 

He is a regular contributor to TheTaste.ie, voted Best Digital Food Magazine in the World, along with well-known national publications including Image magazine, Food & Wine magazine and the Sunday Business Post. Shane also writes a monthly column for the Angle Celt newspaper.

 

Shane’s love of the culinary arts started at a young age and he was inspired by his two grandmothers, who were both avid bakers. The chef has fond childhood memories of sitting at the kitchen table, enthralled by the process of turning a mixture of ingredients into soda bread, tea brack and delicious jam tarts.

 

At the age of 16, he began his first job as a Commis Chef at a local hotel, where his love of cooking was cemented. The aspiring chef began his formal training at Killybeg’s Tourism College in Donegal, and went on to graduate with a Degree in Culinary Arts, specialising in Pastry, from Galway-Mayo Institute of Technology.

 

Throughout his career, having worked in prestigious kitchens including, Knockranny house Hotel, the g Hotel and Fallon & Byrne, Shane has gained skills and techniques from some of the best pastry lecturers and chefs in the country. Today his culinary repertoire and technical skills are second to none and Shane is passionate about passing on his knowledge to the next generation of Pastry Chefs.

 

Shane considers himself very lucky to have spent the past two decades in a career that fulfils him on a daily basis, experimenting with ingredients and methods, developing new recipes and pushing his creativity to produce exquisite pastries that are sculptural, beautiful and delicious.

 

In September 2015, Shane was awarded the title of “Best Bakery Manager in Ireland” in conjunction with Shelflife magazine and made a number of guest appearances at some of Ireland’s most prestigious food festivals including Taste of Dublin, Bloom, Taste of Cavan and many more. Shane also has a regular cookery slot on Sunday AM, TV3 where he can be seen bringing his natural flare and love for all things sweet to the nation’s homes.
